Cooking Demonstration: Shahi Paneer

Join us online for a delicious cooking demonstration!

Shahi Paneer is a luscious North Indian curry you can make at home! “Shahi” means royal, so you know any dish with that name is going to be very rich and flavorful. 

Cook along at home, if you like, as Chef Supriya Mehta guides you through an easy recipe that happens to be vegetarian, and very adaptable to a vegan diet.

You’ll need
  • Paneer - 12 oz(1.5 cups) cubed, OR Tofu (1.5 cups cubed), OR Mixed Vegetables (al dente steamed carrots, green beans, potatoes, green peas, cauliflower and bell peppers - 2 cups)
  • Onion - 1 medium-sized 
  • Tomatoes 4-5
  • Garlic - 4 cloves
  • Ginger Root - 1/2 inch piece 
  • Cashews - 1/2 cup
  • Cilantro leaves for garnish
  • Milk (dairy or non dairy ) -1 cup
  • Ground Cardamom 
  • Ground Cumin 
  • Garam Masala or All Spice 
  • Paprika
  • Ground Turmeric 
  • Ground Coriander
  • Salt
  • Cane Sugar/ Jaggery (even regular sugar will work)
About Supriya Mehta
Supriya learned how to cook from her mother. As a child, she would watch her in the kitchen as she added colorful, aromatic spices and ingredients to big pots full of homemade food Supriya and her sisters. Once Supriya tasted a dish that she loved, she would cook it over and over again until it tasted perfect. She is a vegetarian, and loves cooking with fresh seasonal produce and fresh, home-ground spices. Supriya cooks for a home-style food platform called Shef, and for food industry-focused events. Supriya says that she hopes to contribute towards increasing sustainability in the food industry.
